Vegan Banana & Blueberry Muffin

Ingredients

  • 150g Wheat-free Mix
  • 30g Oat flour 
  • 30g Almond flour
  • 15-20ml honey or maple syrup 
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 150ml water mix with 1 tbsp chia seed
  • 1 tsp vanilla bean essence
  • 3 bananas
  • 3/4 cup blueberries 
  • salt

  1. Preheat oven to 200-230 degrees Celsius and line muffin tins with muffin papers.
  2. Place dry ingredients, except chia seed, in a bowl. 
  3. Add wet ingredients with soaked chia seed and banana and mix thoroughly.
  4. Fold in blueberries and fill muffin papers.
  5. Bake for 20-24 minutes or until an inserted skewer comes out clean.
