Vegan Garlic & Herb Cream Cheese  

Creamy, garlicky, and smoothly smeared on toasted bread

2 small rounds/ 10 minutes prepare time

Ingredients

  • 1 small head garlic
  • cup raw cashew pieces, soaked in water 8-10 hours
  • 1/4 cup unsweetened coconut flakes
  • 1 Tbsp coconut oil (optional)
  • 1 Tbsp almond milk
  • 3 Tbsp fresh lemon juice
  • 1/4 tsp paprika powder
  • Fresh chopped herbs, such as thyme, rosemary, parsely, oregano, fennel 
  • salt

Instuuctions

  1. Drain soaked cashew
  2. In a food processor add in cashew, coconut flakes, almond milk, garlic, lemon juice, salt, oil and blend until smooth.
  3. Pour the mixture into cheese cloth and set it in a container let it sit in fridge for at least 2 hours or overnight.
  4. Carefully take out the set cheese from the cloth and garnish with chopped herbs or sprinkle with paprika powder.
