Mung Bean Flat Cake

Ingredients

  • 2 cups sprouted mug beans
  • 1 cup oat
  • 1/2 cup cashew
  • 1/2 cup almond
  • 1/3 cup water
  • 1 tsp. baking powder
  • 2 tbsp. psyllium husk + 6 tbsp. water
  • salt
  • 1 mashed bananas
  • 2 tsp. vanilla extract
  • figs and blueberries for topping

Instructions

  1. Process sprouted mung beans, oats, nuts in a food processor.
  2. Mix throughly with the rest of ingredients until a moist mixture forms. 
  3. Pour into a baking pan.
  4. Decorate with figs (for extra sweetness) and blueberries. 
  5. Bake in a 200-230 Celsius degree oven for 20-40 minutes until an inserted toothpick comes out clean.
