Cashew & Apple Cheese Cake

Ingredients

For the Crust:

  • 1.5 cups Walnut
  • 2 cups sprouted buckwheat flour
  • 3/4 cup millet flour
  • 5 dates
  • 1 tbsp coconut sugar 

For the Cashew Cheese

  • 2 cups soaked Cashew
  • 1/2 cup Kefir (coconut kefir for vegan)
  • 1/2 tbsp maple syrup
  • salt 

For the Top

  • 3 apples
  • 1/2 tbsp maple syrup
  • 1/2 tbsp lemon juice
  • 1/2 tsp vinilla essence 
  • 1/2 cup frozen cherries 
  • salt

Instructions

  1. Blend all ingredients for the curst in a food processor until they all come together.
  2. Press the blended mixture tightly in a removable tin.
  3. Bake in a 200 Celsius degree oven for 20 minutes.
  4. Blend all ingredients for the cashew cheese until smooth.
  5. Pour the cashew cheese on top of the first crust layer.
  6. Slice apples and cook in boil water with maple syrup, salt, vanilla essence until soft.
  7. Lay apple slices on top of the cashew layer.
  8. Slice frozen cherries and place in between apple slices.
  9. Brush maple syrup lightly on the fruits.
