These muffins are not only healthier than sugar filled muffins, they are higher in plant-protein, fiber and fantastic benefits from cacao with so much less fat. Yet, the best part is it that without butter or oil, these muffins are easier to prepare and clean!
Tofu is a good source of protein and contains all eight essential amino acids. It is also an excellent source of iron and calcium and the minerals manganese, selenium, phosphorous, magnesium, copper, zinc and vitamin B1. (Be sure to read the ingredients before you buy your tofu, some companies process and add too much additives in them).
Cocoa can improve your memory, increase your bliss, reduce heart disease, shed fat, boost immunity, and create loads of energy.
Why not put them together and make yourself a fulfilling snack?!
40 minutes/ 7 small muffins
Ingredients
- 100g all purpose flour
- 30g cacao nibs or 20g cocoa powder
- 4g Baking powder
- 4 Tbsp honey or 5 dates
- 100ml soy milk or milk
- 150g tofu
- pinch of salt
Instructions
Grind cacao nibs ( Skip this step if using cocoa powder)
Put dry ingredients into a bowl and mix well with a whisk.
Blend tofu, milk and honey
Fold in dry mixture into wet mixture with a rubber spatula.
Bake for 20-23 minutes in an oven preheated 180°C oven. Adjust the baking time as necessary.
Check by inserting a toothpick into the muffin, it should come out clean.
Note: You can substitute honey with dates too.
