Wood Ear Mushroom & Radish Salad

super easy, heathy and satisfying 

It's been pretty hot lately, and this salad really helps me to cool down quickly and recover from heat exhaustion.

Wood ear mushroom is known as a high protein, rich in fiber and low-calorie vegetable. 1 cup serving of wood ear mushrooms has only 80 calories, less than1 gram of fat. It also provides 2.6 grams of protein and 19.6 grams of dietary fiber!

10 minutes/ 3 servings

Ingredients

  • 4 cups shredded radish (Chinese radish)
  • 5 pieces of wood ear mushrooms
  • 1/2 onion
  • 1-2 chili 
  • cilantro (optional)
  • 1 tbsp soy sauce
  • 2-3 tbsp white vinegar 
  • pinch of salt

Instructions

  1. Add a pinch of salt into the water and bring water to boil then add in wood ear mushrooms, let it boil for about 3 minutes.
  2. Take it out and let it cool then cut into thin shreds.
  3. Slice onion and shred radish (this requires patient).
  4. Chop chili and cilantro.
  5. Combine all ingredients, mix well and it is ready to serve. Of cause the flavor develops as it sits longer, so it is good to make ahead and store in fridge.
