Peach Salad Dressing

tangy sweetness of a fresh ripe peach and silky texture

Ingredients

  • 1 peach
  • 3 Tbsp olive oil 
  • 1/2 Tbsp butter
  • 1 Tbsp peach jam 
  • 1.5 Tbsp red wine vinegar
  • 1.5 Tbsp fresh lemon juice
  • 1/4 tsp black pepper
  • 1/4 cup fresh basil leaves
  • 1/4 cup fresh marigold flowers leaves
  • 1/4 fresh oregano 
  • 2-3 sprigs of thyme leaves
  • 1/2 Tbsp of fresh parsley
  • salt to taste
  1. In a pan heat butter and add in all fresh herbs and pepper, gently stir about 2 minutes, let the flavors build up. Slowly add chopped peaches, olive oil and jam, cook for another 3 minutes or until peaches are soften. Adjust salt.
  2. Combine the infused mixture with lemon juice and vinegar.

Marigold flower leaves really brings out the sweetness of the peach in this dressing. This sweet and sour dressing is not only delicious with salads, I found it amazing good to soak with eggplants too. Use the soaked eggplants for pizza or burgers.
