Dill Pickles

Cool and crunchy, delightfully tangy homemade pickles made in less than 30 minutes! They are very different from the pickles you find in the grocery story, because these don't have:

-High Fructose Corn Syrup

-Potassium/Sodium Benzoate

-Yellow #5 ​

Scary huh?!

It really is unnecessary to add those things to pickles? Also, why would I want to spend money to buy ingredients that have been found to be harmful to health? No way!

I am excited to share this simple and quick recipe that makes every batch of my pickles return with praises, here we go:

Ingredients

  • 500-800 grams of cucumbers
  • 4 garlic cloves, peeled and smashed
  • 2 teaspoons dill seed
  • 2 teaspoons mustard seed
  • 1/2 teaspoon red pepper flakes or one hot pepper (optional)
  • 1 cup cider vinegar or distilled vinegar
  • 1 cup water
  • 1 1/2 tablespoons salt

Instructions

  1. Prepare the jar, simply wash the jars and lids.

  2. Prepare the cucumbers: wash and dry the cucumbers. Trim away the blossom end of the cucumber. You can leave the pickles whole, cut them into halves, or cut them into spears, how ever you prefer.

  3. Add the spices to the jar.

  4. Pack the pickles into the jars. Pack them in as tightly as you can.

  5. Prepare the pickling brine: combine the vinegar, water, and salt in a small sauce pot over high heat. Bring to a rolling boil and that's enough. Pour the brine over the pickles, filling each jar to within 3-5cm of the top.

  6. Cool and refrigerate: Let the jars cool to room temperature. The pickles will improve with flavor as they age — wait at least 24 hours. Refrigerate once opened; refrigerated pickles will keep for several weeks.
